Guest guest Posted July 9, 2007 Report Share Posted July 9, 2007 Hello! I’m Steph, mom to 6 kids, five still here at home. Ages 10, 6, 5, 4, and two yrs. We also Home school. Anyhow.. I have a few questions or myths that need to be dispelled. We are making the switch. My children love veggies so I don’t see any complications there. Some of them even like the dreaded Brussell sprout. :-) For now, we are going Lacto Ovo. I have heard that a vegetarian menu is cheaper than a menu that contains meats. Have any of you found that to be true? With my life style I don’t have much time to be in the kitchen preparing gourmet meals. A lot of my old store bought “vegetarian” recipes look time consuming – white wine all that. And I want to avoid as much processed food as I can. Esp white flour noodles etc which haunt my recipes too.. Any hints or suggestions in that area? I don’t mind a good sauté but just don’t want to be in there all day. Whats holdin me back from going totally vegan?? I am not a big fan of soy stuff. Is it safe for boys to eat soy with all the phyto estrogens? And while soy dogs are great for those who miss their hot dogs, I just want my kids to know what’s in the food and what actual veggies look like. We are already so “weird” to our neighbors etc, I am not really concerned with trying to fit in. What sort of nutritional issues should I be concerned with? ( outside of the B vits ) My youngest also has Down Syndrome. ( 2 yrs) due to exclusive breast feeding and luck, and avoiding processed baby foods when it was possible - she has NO texture issues and is actually going on a veggie kick. She picks her meat out of her meals. All my kiddos did this at some point. I am convinced that a healthier diet of veggies and fruits etc is “good for her”. Helping with her risk for diabetes etc.. BUT how much trouble do you get from your pedis if any of you have kids? We avoid them as much as possible, but since we already don’t vax against everything we already get a big “ federal case” when we do go in there for something where we think we need them. ( like suspected broken bones :-) ) Is there a food pyramid for “dummies” for the vegetarian? What does a day in your life menu look like? For breakfast we had plain Yogurt, mixed berries, chopped nuts ( almond walnut and pecan) and a vegan bagel. My concern with this breakfast is the bagel had about one how gram of fiber. :-( So .. how can you tell that your whole grain is actually healthy if your not eating something like millet or steel cut oats. ( which BTW are the same price as the rolled processed kind. I was pleasantly surprised ! ) Any Crockpot recipes for dry beans?
