Guest guest Posted June 21, 2007 Report Share Posted June 21, 2007 I know it's summer and creamy soups are usually not on the menu but a recipe I made for veggie pot pies gave me an idea for a super easy creamy soup. ALL the creamy soups I have made in the past have never come out right (like not even edible!). This one came out PERFECT!!! Super easy and Super YUMMY!!!! BTW: it is by NO means low fat! I suppose you could make it low fat if you really wanted to. You can also use any veg combo you want. Easy Cream of Veggie Soup 2 cans condensed cream of mushroom soup 2 cans milk 1 can veggie broth or water 2 lbs frozen veggie mix ( I used broccoli,cauliflower and carrot mix) 5 medium size potatoes (diced into large bite sized pieces) seasonings to taste: ( I went heavier on the onion than the garlic for this one) salt pepper onion powder (or 1 large onion diced) garic powder Directions: 1) Cut any huge pieces of frozen veggies up into bite size pieces 2) Cook frozen veggies and potatoes until just tender 3) Add all ingredients to large pot with a lid 4) Bring to a boil 5) Reduce heat and simmer for about an hour or longer 6) Serve with a fresh baguette Quote Link to comment Share on other sites More sharing options...
