I became veg 2 yrs ago due to moral issues with meat but I don't eat really healthy b/c I don't cook enough. I'd love some ideas of really fast and/or simple recipes to prepare that are healthy as well (not a ton of cheese, butter, oil, etc). Anyway, that's why I joined the group as well as to chat with like minded others. I live in the middle of rural Iowa and there are not very many vegetarians around here!!! Are you able to find tofu, tempeh and a wide variety of grains like quiona and amaranth or are you stuck with beans and brown rice and pasta? I have one suggestion for a recipe that's beginner level if you can find tofu: http://www.recipezaar.com/88599 This is the first tofu recipe I made for my DH and it got him " safe " with the idea that tofu can be good and wasn't going to kill him. It's hyper tasty, too. Do freeze and thaw out the tofu before you squeeze the water out. It does approve the texture 100%.
