Pumpkin butter is like apple butter, only made with

pumpkin! It's a little tedious because you have to

stand at the stove stirring it for what seems like

forever, but the result is delicious. I add a little

brown sugar to mine, which the recipe doesn't call

for. I've seen recipes for making it in a slow cooker

but they all make quarts of it and it would take me

forever to use it up, even though I do love the stuff.

 

Stinky & Harriet are the names of the cats at my job.

 

Here's the recipe I use:

Ingredients:

2 cups cooked pumpkin, pureed

1/2 cup honey

1 teaspoon grated lemon rind

1 tablespoon lemon juice

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon ginger

1/8 teaspoon cloves

1/4 teaspoon salt

 

Directions:

 

Mix all ingredients thoroughly. Simmer uncovered on

low heat about 40 minutes, stirring frequently, until

thick (like stiff apple butter). When it is thick

enough for you, ladle into jars and refrigerate.

 

This recipe for Honey-Pumpkin Butter serves/makes 1.5

cups

This sounds like a great recipe and I do love pumpkin butter.

How much brown sugar do you add?
