Speaking of yummy dips and spreads, this is

one I like to make to use as a sandwich filler;

a slightly different variation of a traditional

spinach dip. Mix some up and use it to hold those

shredded veggie wrap sandwiches together.

Great with crackers or dolloped on a veggie burger, too. :)

Veggie Dip

1 cup mayonnaise

1 cup sour cream

1 envelope vegetable soup mix

1 package (10oz) frozen chopped spinach, thawed

and squeezed dry

1 can (8oz) water chestnuts, drained and chopped

Assorted raw vegetables and crackers

In a bowl, combine mayonnaise, sour cream and

soup mix. Stir in spinach and water chestnuts.

Cover and refrigerate for at least 2 hours. Serve with

vegetables and crackers.

Yield: 3 cups

Who can mistake great thoughts?

They seize upon the mind; arrest and search,

And shake it; bow the tall soul as by wind;

Rush over it like a river over reeds.

This is so good. I haven't made it in a long time. Now you have my mouth

watering for it.
