Guest guest Posted June 9, 2007 Report Share Posted June 9, 2007 Speaking of yummy dips and spreads, this is one I like to make to use as a sandwich filler; a slightly different variation of a traditional spinach dip. Mix some up and use it to hold those shredded veggie wrap sandwiches together. Great with crackers or dolloped on a veggie burger, too. Veggie Dip 1 cup mayonnaise 1 cup sour cream 1 envelope vegetable soup mix 1 package (10oz) frozen chopped spinach, thawed and squeezed dry 1 can (8oz) water chestnuts, drained and chopped Assorted raw vegetables and crackers In a bowl, combine mayonnaise, sour cream and soup mix. Stir in spinach and water chestnuts. Cover and refrigerate for at least 2 hours. Serve with vegetables and crackers. Yield: 3 cups ~ PT ~ Who can mistake great thoughts?
