Guest guest Posted June 6, 2007 Report Share Posted June 6, 2007 Vegetarian Chili Too 1 can (15 oz.) black beans, rinsed and drained 1 can (15 oz.) white beans, rinsed and drained 1-1/2 tsp. finely minced garlic 1 cup minced red onion 4 tsp. chili powder 1/2 tsp. salt 1/2 tsp. cumin 1/8 tsp. oregano Pinch cayenne pepper 3 cans (14.5 oz. ea.) crushed tomatoes, undrained 6 TB fresh cilantro, chopped 8 TB sour cream 8 TB grated Cheddar cheese 1. Combine all ingredients except sour cream and cheese in a crock pot; stir to combine. 2. Cover and cook on LOW heat setting for 6 to 8 hours. 3. To serve, ladle into soup mugs and sprinkle each serving with Cheddar cheese and a d dollop of sour cream, and garnish with fresh cilantro. Makes: 6 servings.
