buttermilk sub? - i just found these.....

i just found this:

 

Replacing buttermilk:

If a recipe calls for buttermilk, add one tablespoon

of white vinegar or lemon juice to a cup of soymilk to

replace buttermilk and mix well. It’s not quite as

robust as buttermilk, but will have a similar flavor.

 

and

 

For each cup required: place 1 tablespoon lemon juice

or vinegar in a glass measuring cup. Add in soy milk

to equal 1 cup. Stir and let stand for 10 minutes.

Rice milk does not work as well because of the lower

protein content.

I was thinking it may be the same as when I would make a sub

using " real " milk when I was out of buttermilk (w/ the lemon juice or

vinegar). I'll have to try it with the soy milk. I've been wanting to

try the recipe for sweet potato biscuits...I'll let you know ho wthey

turn out. Thanks! :)
