Guest guest Posted May 20, 2007 Report Share Posted May 20, 2007 Fudge Pecan Layer Bars 1/2 cup butter (1 stick) 1 cup packed brown sugar 1 egg 1 teaspoon vanilla extract 1-1/4 cups all-purpose flour 1/2 teaspoon baking soda 1/2 teaspoon salt 1-1/2 cups uncooked regular oatmeal (not instant or quick-cooking) 1/4 cup chopped pecans 1 cup chocolate chips 1 tablespoon butter 1/2 cup condensed milk 1/4 teaspoon salt 1/2 cup chopped pecans 1 teaspoon vanilla extract Preheat oven to 350°F. Grease a 9x9-inch or 11x7-inch pan or baking dish. With an electric mixer, cream together the 1/2 cup butter, brown sugar, egg and vanilla. At low speed, add the flour, baking soda and salt, blending well. Then gradually add the oatmeal and 1/4 cup chopped pecans. Reserve 2/3 cup of the mixture and set aside. Press the remaining mixture into the prepared pan in an even layer. In a small saucepan, combine the chocolate chips, 1 tablespoon butter, condensed milk and salt. Stir, over low heat, until chocolate is melted and mixture is well combined. Remove from heat, and add the 1/2 cup chopped pecans and 1 teaspoon vanilla. Spread fudge mixture over the oatmeal layer. Crumble the 2/3 cup reserved mixture over the fudge layer. Bake for 25 to 30 minutes until lightly browned. Cool, and cut into bars or squares.
