Stephanie Potato Sausage Casserole 2 Cups soy sausage 1 can condensed cream of mushroom soup 3/4 cup of plain rice milk 1 large onion fine chopped 5 cups cubed potatoes with skins 2 cups vegan cheese garlic salt pepper italian seasoning 1. Preheat the Oven to 350 2. Place the potatoes, sausage,soup,onions, soymilk in a 9x13 pan and mix well. 3. Cover with foil and bake 1 1/2 hours or until potatoes are tender 4. Top with cheese 5. Guest guest Posted May 10, 2007 Report Share Posted May 10, 2007 I do a soup that is similar to this. We always make it the first night on a camping trip, and we make it at home as " comfort " food. I make it by lightly frying thnly sliced: onions, asparagus (the green veggie!), mushrooms (the more types the better), and chopped soy sausage. I add these to either a homemade mushroom soup (at home) or a canned mushroom soup (camping) and heat together. Cheese is a variation we add to the individual bowl when we feel like it. When camping I also add dumplings on top. The asparagus (usually 4 or 5 spears) is a very nice taste compliment to the mushroom soup. Thanks for this new variation... I may try this camping too! Should work well in a dutch oven...
