Guest guest Posted May 3, 2007 Report Share Posted May 3, 2007 Vegetarian Tacos 1/2 cup water 1/4 cup lentils, rinsed and drained 1/4 cup onion, chopped 8 taco shells 1 can (8 oz.) tomato sauce 5 tsp. (1/2 of a env.) taco seasoning mix 8 oz. firm or extra-firm tub-style tofu (fresh bean curd), drained and finely chopped 1-1/2 cups lettuce, shredded 1 medium tomato, chopped 1/2 cup Cheddar cheese, shredded 1/2 cup bottled salsa, optional In a medium sauce pan combine water, lentils, and onion. Bring to boiling; reduce heat. Simmer, covered, for 25 to 30 minutes or until lentils are tender and liquid is absorbed. Heat taco shells according to package directions. Stir tomato sauce and taco seasoning mix into lentils. Bring to boiling; reduce heat. Simmer, uncovered, for 5 minutes. Stir in tofu; heat through. Spoon into taco shells.
