Cottage Cheese Salad for 2

 

1 cup fat free cottage cheese

1/4 cup cucumber, seeded, diced

1/8 cup carrot, peeled and grated

2 TB red bell pepper, diced

1 small clove garlic, minced

Dash salt and pepper

Dash celery salt, optional

 

Combine all ingredients in small bowl. Stir. Let salad stand for 10 minutes

to blend flavors. Store any remaining salad in sealed container in the

refrigerator.

 

Nutrition Information:

Per serving = 80 calories, trace fat, 15 g protein, 5 g carbs,

5 mg cholesterol, 303 mg sodium.
