Guest guest Posted April 24, 2007 Report Share Posted April 24, 2007 Joanie's Mashed Potatoes 5 or 6 russet potatoes, peeled and cubed 1/2 onion, diced 2 whole cloves garlic Water to cover potatoes Place all the ingredients in a large sauce pan or Dutch oven. Bring to a boil, reduce heat to low, cover and simmer for 20 to 30 minutes or until potatoes, onions and garlic are tender. Drain off water and discard. Return potato mixture to the hot pan. Using a hand held mixer or blender, mash the potato mixture until the lumps are gone. Add to mashed potatoes: 4 TB butter 1/4 tsp. white pepper 1/2 tsp. salt 1/3 cup cream or milk (or enough make the right consistency) Blend until well mixed and smooth.
