Guest guest Posted April 21, 2007 Report Share Posted April 21, 2007 Moroccan Couscous III 1-1/4 cups water 1 cup vegetable broth 1 TB vegetable oil 1-1/2 tsp. grated lemon zest 1/2 tsp. salt 1 box (10 oz.) couscous 1 can (19 oz.) chickpeas (garbanzo beans), rinsed and drained 1 cup raisins OR 4 dates, chopped 1/4 cup fresh parsley, chopped Bring water, broth, oil, lemon zest, and salt to a boil in a medium sauce pan over high heat. Add couscous, remove from heat; cover and let stand 5 minutes. Fluff couscous with a fork and transfer to a serving bowl. Add chickpeas, and raisins/dates, and parsley; toss to combine. Nutrition: Information: Per serving = Calories 340, fat 3.5 g, saturated fat .5 g, cholesterol 0 mg, sodium 560 mg, carbs 65 g, fiber 6 g, protein 11 g.
