Guest guest Posted April 23, 2007 Report Share Posted April 23, 2007 Lentil Meat Loaf 1 cup dried lentils 1/4 cup wheat germ 1/4 cup ground flax seeds 3/4 cup whole wheat bread crumbs 1/2 cup cooked brown rice 1 small onion, minced 1/2 cup shredded carrots 3/4 cup fat free egg substitute or egg whites 1 tsp. ground cloves 2 tsp. thyme 1 TB reduced sodium soy sauce 3/4 cup (6 oz.) tomato sauce 1 TB olive oil 1 tsp. Tabasco hot pepper sauce 1. Place lentils in a small sauce pan and cover with water. 2. Cook over low heat for 1-1/2 hours or until tender. 3. Coarsely mash lentils and combine with remaining ingredients (reserve 2 oz. tomato sauce). 4. Pour mixture into a loaf pan sprayed with nonstick cooking spray. 5. Pour remaining tomato sauce onto the top of the loaf. 6. Cover with foil and bake at 350º F., for 45 minutes. 7. Remove foil and bake for another 15 minutes or until loaf is firm to the touch. Servings: 6. Note: Great served with mushroom gravy and dinner salad the next day or on a sandwich. Nutrition Information: Per serving = Fat: 5 g, Protein: 17 g, Carbs 50 g.
