Waldorf Salad

 

~~~Salad~~~

2 cups Granny Smith or Gala apples, cored and diced

1 cup diced celery

2/3 cup halved seedless grapes OR pineapple chunks *

1/3 cup Cheddar cheese, diced

1/4 cup chopped pecans or walnuts

 

~~~Dressing~~~

Whisk in a small bowl:

1/2 cup fat free mayonnaise

1/2 cup fat free sour cream

3 to 4 tsp. lemon juice

2-1/2 tsp. Equal® for Recipes or 8 packets Equal® sweetener

or 1/3 cup Equal® Spoonful™

 

Combine apples, celery, grapes/pineapple, cheese and nuts in a large salad

bowl.

 

Add Dressing to salad and mix well.

 

Nutrition information

Per serving (about 1 cup) = 251 calories, 21 g protein, 27 g carbs,

48 mg cholesterol, 489 mg sodium.

 

Diabetic Exchanges: 1-1/2 fruit.

 

* Note: If disired, use a combination of both.
