Guest guest Posted April 19, 2007 Report Share Posted April 19, 2007 Corn Salad ~~~Salad~~~ 2 cups cooked corn kernels 1/2 cup green bell pepper, chopped 1/2 cup celery, chopped 1/4 cup onion, chopped 1/4 cup pimeinto, chopped ~~~Dressing~~~ 1/4 cup vegetable oil 3 TB cider vinegar 1/2 tsp. salt 1/4 tsp. ground black pepper 3/4 tsp. dry mustard To make the Salad: Combine corn, green pepper, celery, onion and pimento together in a large bowl. To make the Dressing: In a small bowl mix the oil, vinegar and seasonings. Stir to mix well. Pour the dressing over the salad and toss gently. Chill for at least 2 hours before serving.
