Guest guest Posted April 19, 2007 Report Share Posted April 19, 2007 Broccoli Quiche 1 ready made, prepared 9 " pie crust 3 cups finely diced broccoli 2 TB butter or stick margarine 1/2 cup chopped yellow onion 1 tsp. grated lemon peel 1/2 tsp. salt 1/4 tsp. ground black pepper 4 large eggs 1-1/2 cups milk 3 TB all purpose flour 1/2 tsp. Dijon mustard 1/2 cup shredded Swiss cheese Preheat oven to 375º F. Fit pie crust into a 9 inch quiche or pie pan, trimming any excess dough. Prick with fork. Line dough with foil; fill with dried beans. Bake for 10 minutes. Remove foil and beans. Bake for 5 minutes longer. Transfer crust to a wire rack to cool. In a large pot, bring 2 quarts of water to a boil. Add broccoli; cook until just tender, about 5 minutes. Drain broccoli and set aside. In a large skillet, melt butter over medium heat. Add onion; sauté until tender, about 5 minutes. Stir in broccoli, lemon peel, salt, and pepper; remove from heat. In a medium bowl, combine eggs, milk, flour, and mustard. Mix until smooth. Sprinkle half the cheese into crust. Top with broccoli mixture. Pour egg mixture over broccoli. Top with remaining cheese. Bake quiche until center is just set, about 40 to 45 minutes.
