Guest guest Posted April 23, 2007 Report Share Posted April 23, 2007 I don't have any proportions or measurements on this recipe, but it was super good. Last winter I was addicted to making this. The squash should melt in your mouth! Ingredients needed: Buttercup squash Fresh garlic Fresh parsley Olive Oil Parmesan cheese (or vegan alternative) Use Buttercup squash (I tried it with Acorn, but it wasn't as good, maybe because it needed to bake longer? You want one that will break down easily--so Delicata might be another good choice). Peel the squash and then cut it up into small cubes. Mince a bunch of garlic (to your taste--I like tons of it). Chop up a bunch of FRESH parsley--(quantity to your taste--I like lots of it) Mix the garlic and parsley in with the squash cubes. Coat the whole mixture in olive oil. Stir it up to everything is coated. Put a layer in a baking dish. Then put in a layer of parmesan cheese, then another layer of the squash, another layer of parmesan, etc. You can put some of the parmesan on top, so it gets kind of brown and crunchy. Then bake the whole thing in the oven until the squash is really soft. Guessing here, but I think it was about 40-45 minutes at 350 degrees.
