I know it was a vegan recipe because it only called for vegetable oil, no eggs, butter or dairy milk. I would like to make them again but can't find the web site where I got the recipe. I belong to Calorie King and I did sort of build the recipe there & saved it, but I think I left some stuff out. There's no liquid in my list, other than oil and the bananas. There's also no sugar/sweetener in my list, but it's possible I used Splenda and just didn't bother to add it since it would have contributed very few calories. Can somebody look at this and let me know if liquid does need to be added, and how much sweetener would a muffin recipe like this normally call for? 4 bananas (recipe might have said 3-4, I used 4 medium-small ones that totalled 12.5 oz) 2 1/2 cups whole wheat pastry flour 3/4 tsp salt 1 tsp cinnamon 1 stp baking powder 1 tsp baking soda 4 tbsp oil (I think it called for 4 - I used 2 tbsp and some applesauce) 1/2 cup chocolate chips (may have called for more but I cut back to save calories, carbs & fat) Normally when I build a recipe I include water if it's an ingredient, and always count the Splenda if I use it.
