Guest guest Posted April 12, 2007 Report Share Posted April 12, 2007 Veggie Sandwiches 4 TB low fat Neufchâtel cream cheese, softened 4 slices honey oat whole wheat bread, toasted * 1 cup shredded carrots 1 cup spring salad mix 2 TB thinly sliced green onions (white and green parts) 3 TB fat free sun dried tomato salad dressing 1 medium cucumber, peeled and thinly sliced Spread cheese on bread. Arrange cucumber on 2 slices bread. Toss together carrots, spring mix, onions and salad dressing. Top cucumber with carrot mixture and remaining bread. * Note: Also good with wheat berry bread. Serves: 2. Nutrition Information Per serving = Calories 348, Total Fat 10 g, Sat Fat 4 g, Cholesterol 22 mg, Sodium 623 mg, Carbs 52 g, Fiber 7 g, Protein 12 g.
