Guest guest Posted April 12, 2007 Report Share Posted April 12, 2007 Hi all - It's been raining and nasty here in New England, so I decided to make some " warm up comfort food " for my fam. It hit the spot and there's plenty of leftover nacho topping to add to tacos or sloppy joes tomorrow. ( " con carne " topping) 1 small onion, diced 2 cloves garlic, minced 1 small jalepeno, diced 1 pkg meat substitute 1 can diced tomatoes (I used a can w/ added jalepenos) 1 can " Fiesta corn " - corn w/ peppers mixed in Cumin and chili powder to taste Tortilla chips (enough for the family you're feeding. I used Green Mountain Gringo Tortilla Strips) Pepper Jack Cheese shredded 1 red onion, large dice 1 red pepper, large dice 1 green pepper, large dice 1 yellow pepper, large dice ------------- Heat pan on low heat, add Olive Oil to coat. Saute onions and garlic in olive oil for three minutes. Add TVP and stir to mix. Saute another 5 minutes Add in tomatoes, jalenpeno and corn. Raise heat to high until boiling, lower and simmer 15 minutes Pre-heat oven to 400 degrees Line bottom of baking or casserole dish loosely w/ tortilla chips sprinkle cheese generously over chips. Sprinkle diced fresh veggies on top of cheese Repeat layers, leaving room at the top Place in oven while " Con Carne " cooks - 10 minutes or until cheese begins to brown Spoon " Con Carne " over top of the baked nachos and continue baking another 5 minutes.
