I am 30 yrs old, married to a wonderful man and we have 2 wonderful children. My son is 4 and has recently been diagnosed with Apraxia. My daughter is 6. I have always wanted to be Vegetarian and have just in the last couple of weeks made the commitment to do so. I was browsing through the files and there are some wonderful recipes in there, and I can't wait to try them out! My husband is not following the path I am here but defiantly doesn't have a problem with it and is very happy to eat as healthy as he can. One of the challenges I find is feeding my children without meat! I am not expecting them to be vegetarian at this point but when I give them lunch and dinner I would like to include as many vegetarian dishes as I can. Any suggestions? Guest guest Posted April 8, 2007 Report Share Posted April 8, 2007 Hi Tammy, Welcome to the group. as a vegetarian, I would say that you are doing a great service to your children by teaching them to eat healthy. I think the best way to get children to enjoy veggies is to take advantage of the great summer vegetables. By introducing steamed vegetables such as corn, green beans, and carrots to meals, you can slowly get them adjusted to the idea. also, there are easy items to make such as veggie lasagna, stir-frys, veggie tacos/burritos, etc.good luck in your search! paru Doug and Tammy <dtfair wrote: Hello everyone.
