Guest guest Posted April 7, 2007 Report Share Posted April 7, 2007 Coconutty Bars 1/2 cup butter 1/2 cup brown sugar, packed firm 1 cup flour 2 large eggs 1 cup brown sugar 1 1/2 teaspoons vanilla 2 tablespoons flour 1 teaspoon baking powder 1/2 teaspoon salt 1 cup shredded coconut 1 cup pecans, chopped Oven Temp ~ 350° Preheat Oven Bake Time ~ 35 minutes Pan Type ~ 9 x 13 " baking pan In a large mixing bowl cream together the butter, and first amount of brown sugar. Add the flour and mix with a fork until crumbly. Pat crumb mixture into pan. Bake in hot oven for 10 minutes. Remove from the oven and cool on wire rack while preparing other ingredients. In a large mixing bowl beat the eggs until fluffy. Add second amount of brown sugar and vanilla. Mix well. Add second amount of flour, baking powder, salt, coconut and chopped pecans. Mix well and spread on top of first layer. Return mixture to oven and bake for remaining 25 minutes. Remove from oven and cool on wire rack. Cool before cutting.
