Guest guest Posted March 29, 2007 Report Share Posted March 29, 2007 Confetti Cole Slaw 3 cups shredded green cabbage 1 cup shredded red cabbage 1-1/4 cups shredded carrot 3/4 cup red onion, finely chopped Fresh parsley sprigs for garnish ~~~Dressing~~~ 1/3 cup reduced fat mayonnaise 3 TB frozen apple juice concentrate, thawed 2 TB apple cider vinegar 1 TB Dijon mustard 3/4 tsp. celery seeds 1/2 tsp. grated lemon peel 1/2 tsp. salt 1/4 tsp. ground black pepper In a large salad bowl, combine the mayonnaise, apple juice concentrate, vinegar, mustard, celery seeds, lemon peel, salt, and pepper. Whisk until well blended. Add green and red cabbage, carrot, and onion. Toss until vegetables are evenly coated. Garnish with parsley sprigs and serve. Yield: 6 servings.
