Almond Pasteurization to be manditory! (and unlabled)

This is really unbelievable.

I go through such pains to find raw cheeses, now this!

Everyone, pleas write to the almond board -1

2- Please forward this information, or a summary to everyone you

know, and all the groups you belong too

Pasteurized almonds don't taste like almonds. They are partially

cooked and loose that intangible almond extract fragrance. They are

also not as moist and creamy inside. Just try flash heating them

yourself and see the difference. Also, heating damages the healthy

fats. Its fine to toast almonds lightly yourself before baking with

them, but if you let cooked/pasteurized almonds sit on the shelf,

they start to go rancid.

I have a few questions: Does this affect both shelled and unshelled

almonds? Will we be able to get unpasteurized real almonds from other

countries?

Thanks.

Sincerely,

Matt Di Clemente
