Guest guest Posted March 16, 2007 Report Share Posted March 16, 2007 Pear and Blue Cheese Salad for 1 Salad 2 cups bite-sized pieces romaine 1/2 red pear, thinly sliced 2 TB crumbled blue cheese 2 TB coarsely chopped walnuts, toasted Cider Vinaigrette 2 TB walnut, olive, or vegetable oil 1-1/2 tsp. cider vinegar 1/4 tsp. Dijon mustard 1/8 tsp. salt 1/8 tsp. pepper 1 garlic clove, finely chopped Shake all ingredients in tightly covered container. Toss vinaigrette and remaining ingredients just before serving. Nutritional Information: 1 Serving = Calories 240 (Calories from Fat 190), Fat 21 g (Saturated 3 g), Cholesterol 5mg, Sodium 180 mg, Potassium 280 mg, Carbs 10 g (Dietary Fiber 2 g), Protein 4 g.
