Here is a Turkish recipe using beetroot which I really liked. The

first time I made it I overlooked the fact that the beetroot needed

to be cooked and I grated it raw - it was great.

 

300g (11 oz) grated cooked beetroot

1-2 large cooking apples, grated

250g (8 oz) (raw weight) couscous, cooked in the usual way.

 

Dressed with: pinch of salt, pinch of pepper and 1 tbsp sugar

dissolved in about 3tbsp red wine vinegar, 250g (8 oz) natural

yoghurt and about 3tbsp olive oil.

Maybe this might change your mind, PT.
