Guest guest Posted March 8, 2007 Report Share Posted March 8, 2007 This recipe is so quick and easy. It makes just the right filling for veggie burritos or a nice topping for salad, pasta or rice. The longer you let it simmer, the more flavorful the beans are. Salsa Pinto Beans 1 small onion 1 garlic clove, minced 2 tsp minced fresh cilantro or parsley 1 Tbs olive oil 2 cans (15 oz each) pinto beans, rinsed and drained 2/3 cup salsa In a large skillet or saucepan, saute onion, garlic and cilantro in the oil until tender. Stir in beans and salsa; heat through.
