Guest guest Posted March 6, 2007 Report Share Posted March 6, 2007 Yogurt Cucumber Sauce 1/2 Armenian cucumber, peeled and halved lengthwise 1 garlic clove, minced 1/2 tsp. salt 1 cup plain yogurt 2 TB extra virgin olive oil 1 TB fresh mint, finely chopped Ground black pepper Using a small teaspoon, scoop out the seeds of the cucumber and discard. Coarsely shred the cucumber. Drain in paper towels. Gently blot the excess liquid from the cucumber. Add to a small bowl; garlic, yogurt, olive oil and mint. BTW what is an Armenian Cucumber?
