I love lasagna! That or anything with potatoes.

Mmmmmmm

 

Here is a recipe for lasagna rolls that I enjoy.

 

Spinach Lasagne Rolls

 

12 uncooked lasagne noodles

1 jar spaghetti sauce (15.5 oz) *I use my own*

1 15oz. carton of ricotta cheese

1 egg

1 (10 oz) pkg frozen spinach, thawed and squeezed

2 cups shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 tsp salt

1/4 tsp pepper

2 cloves garlic, crushed

 

Cook noodles in boiling water until soft enough to work with.

Drain and cool. Mix the remaining ingredients in a bowl.

Spread 4 Tbs (approx)mixture on each noodle and roll it up.

Pour a bit of spaghetti sauce in bottom of a baking pan and

lay lasagne rolls on top. Pour remaining sauce over top.

Cover and bake at 350 degrees for 30 minutes, or until

hot and bubbly.

Optional: sprinkle top with some extra cheese and bake

additional 5 minutes to melt. Serves 6 to 8.

 

You can also make a double batch of these rolls and

freeze them for quick meals. :)
