Irish Herbed Potatoes 2-1/2 lbs potatoes, peeled and cut into wedges 1/2 cup butter, melted 1 Tbs lemon juice 1/4 cup chopped fresh parsley 3 Tbs chopped fresh chives or dried chives 3 Tbs chopped fresh dill weed or 3 tsp dried dill weed 1/8 tsp salt 1/8 tsp pepper In a saucepan, cook potatoes in boiling salted water until tender; drain. Combine remaining ingredients; pour over potatoes and toss to coat. Serve immediately. Yield: 8-10 servings ~ PT ~ Month of March ~ great is the forwardness of the birds; Severe is the cold wind upon the headlands; Serene weather will be longer than the crops. ~ anon.
