What is your favorite vegetarian meal or dish? > [share the recipe if you have one] > Here is a very quick and simple soup which I made today: Green Split Pea Soup 2 small onions, chopped 2 celery stalks, chopped 1 Tbsp olive oil 250g (9 oz) green split peas 600 ml (2.5 cups) vegetable stock Salt and pepper to taste freshly grated nutmeg Gently saute onions and celery in oil until soft. Add vegetable stock and split peas and simmer for about 20 minutes or until split peas are soft, adding additional water if necessary. Add salt and pepper to taste and some freshly grated nutmeg.
