Udon Noodles with Walnuts and Pomegranates Vegan 30 minutes or fewer This pasta is the perfect example of how a few pomegranate seeds can make a simple dish spectacular. 1 10.25-oz. pkg. dried udon noodles 1 lb. broccoli, cut into small florets (about 3 cups) 1 small red bell pepper, diced (about 1 cup) 2 Tbs. toasted walnut oil, divided 1 12-oz. pkg. extra-firm tofu, drained and cubed 2 cloves garlic, minced (about 2 tsp.) 1/4 cup chopped walnuts 1 Tbs. maple syrup 1 cup fresh pomegranate seeds 5 green onions, white and green parts chopped (about 1/3 cup) Directions: 1. Cook noodles in boiling salted water 3 minutes. Add broccoli and bell pepper, and simmer 2 minutes more. Drain. 2. Heat 1 Tbs. oil in skillet over medium heat. Add tofu cubes, and cook 10 minutes, or until browned, turning occasionally. Remove from heat, add garlic, and stir 30 seconds, or until garlic is fragrant. Stir in walnuts, maple syrup and remaining walnut oil. 3. Toss pasta mixture with tofu mixture, pomegranate seeds and green onions. PER SERVING: 337 CAL; 16 G PROT; 12 G TOTAL FAT ( 1 SAT. Potato Lasagna -read notes at the end -------------- 9 lasagna noodles, cooked 3 (or more) cups shredded cheddar cheese 8 servings of instant mashed potatoes 1 large onion, chopped 2 sticks butter Saute onion and butter. Spray a little Pam in a 9 x 13 inch baking pan. Put a little onion and butter on bottom of pan, then 3 noodles, then 1/2 the potatoes. Sprinkle 1/3 cheese and spread on some of the butter and onion mixture. Layer 3 more noodles and then rest of potatoes. Put 1/3 of cheese, more butter and onions. Add the last 3 noodles. Put remaining 1/3 cheese on top. Pour on rest of onion and butter on top. Cover and bake at 350° for 25 minutes. Can be made ahead, but cooking time will have to be adjusted as it will be coming out of the refrigerator cold instead of going into the oven already hot when just assembled. After hot and bubbly, let sit for 15 minutes so butter can be absorbed into all ingredients. My Notes: I use 9 Barilla no-cook lasagna noodles. Substitute vegetable bouillon or broth for the butter, using 2 cups boiling water and 2 small (or 1 large) bouillon cubes. Use a little of this to saute the onions in a small saucepan, then add the remainder of the bouillon to the saucepan and let it sit for few minutes so the bouillon takes on some of the flavor of the onions. You can't have too much onion in this recipe! My apologies. One of my Favorites: Colcannon To serve 2 as a main dish or 3 as a side: 2 large potatos 2 medium rutabagas or 2 large turnip small bunch of kale or half a head of cabbage Cut up and cook the potatoes and rutabaga/turnip together in a large pot with some water until they are all tender . Add the kale/cabbage shortly before the root veggies are ready. Drain. Mash all the vegetables together with 2 or 3 tblsp of butter and salt to taste.
