Guest guest Posted February 27, 2007 Report Share Posted February 27, 2007 It would work fine, but I find that canned corn, doesn't taste as fresh and is rather starchy tasting. Fresh or frozen corn is my preference, but that would definitely work. Today I made this again and I added an avocado, diced into small pieces. I also added a little garlic salt and it was so yummy. I increased the lemon juice by a Tablespoon, to compensate for the avocado. It was DELICIOUS!!!
