Recently, I made something that was easy, affordable, and very tasty. I'm a fan of the 15 minute meal, btw, but this recipe will fool almost every discerning palate. it's that good! Tuscan Beans and Pasta: INGREDIENTS one box of PASTA RONI, Parmesano one 15 oz. can of Great Northern beans one medium tomato, chopped one cup of sliced Kalamata or Ripe olives 2 cloves garlic, minced 2 tbsp of margarine or olive oil 2 tsp of Rosemary, fresh (or 1 tsp dry) 1/2 cup milk 1/2 cup of crumbled feta cheese (i bought La Chevier, very tasty) 1/2 cup of croutons, coarsely chopped (optional) DIRECTIONS 1. IN MEDIUM SAUCEPAN OVER MEDIUM HEAT, SAUTE GARLIC UNTIL SLIGHTLY BROWNED AND FRAGRANT. 2. ADD 1 1/3 CUPS WATER AND MILK; BRING TO A BOIL. 3. SLOWLY STIR IN PASTA, SPECIAL SEASONINGS, BEANS, TOMATO, OLIVES, ROSEMARY. 4. RETURN TO A BOIL. 5. REDUCE HEAT TO MEDIUM-LOW. 6. GENTLY BOIL UNCOVERED, 5-6 MINUTES OR UNTIL PASTA IS TENDER. STIR FREQUENTLY. 7. STIR IN CHEESE. SERVE IN BOWLS,TOPPED WITH THE CROUTONS. 8. IF YOU WANT, USE CRACKED BLACK PEPPER TO TASTE. enjoy....
