Calico Fri-chik Quiche - correction

Below it says to used cooked Fri-Chik, but it is ready to use, right out of the

can. Use a 12.5 oz can, drain the broth and dice the Fri-chik. I freeze my

broth in ziploc bags for using in soups and gravies.

Calico Fri-chik Quiche

 

 

Calico Fri-Chik Quiche

 

1 (9-inch) deep dish Ms. Smith's frozen pie shell or homemade

1 red bell pepper, chopped

1 green bell pepper, chopped

1 cup Cheddar cheese, grated

1 cup Swiss or Parmesan cheese, grated

1 c. cooked spinach, squeezed dry

1 cup cooked Worthington Fri-Chik, diced

1 T. butter or Smart Balance Light

1/2 cup onion, coarsely chopped

1 tablespoon all-purpose flour

2/3 cup half and half or Evaporated Milk

1/2 cup sour cream(I use reduced fat)

4 eggs, beaten

1/4 teaspoon ground nutmeg

1 tablespoon parsley, chopped

 

TO PREPARE:

 

Preheat oven to 350 degrees.

 

In a pie shell, layer chopped peppers, cheeses, spinach, and Fri-Chik.

 

In a saute pan, melt butter and saute onions until soft. Whisk in flour

thoroughly. Stir in half and half and simmer until thickened, about 3 to 5

minutes. Let cool.

 

In a large bowl, combine sour cream, eggs, nutmeg and parsley. Stir into

sauteed onion mixture.

 

Pour filling into pie crust. Bake 35 to 40 minutes or until set.

 

SERVES: 6 - 8

 

Fri-chik is a vegetarian meat analogue/substitute , which is made by the

Another great way to freeze broth is in ice cube trays. I do this for my

kids. It will cool down any soup and not water it down too much.

great idea. My youngest doesn't like her soup as hot(temp wise) as the rest of

us, so this would work great. She usually uses an ice cube to cool hers down

quick.
