Guest guest Posted February 13, 2007 Report Share Posted February 13, 2007 Carrot Couscous 2/3 cup carrot juice 1/2 tsp. fresh lemon juice 1/4 tsp. salt 1/8 tsp. ground black pepper 1/2 cup uncooked couscous 2 tsp. olive oil 2 TB fresh chives, chopped Bring first 4 ingredients to a simmer over medium-high heat. Gradually stir in couscous. Remove from heat; cover and let stand 5 minutes. Drizzle with oil; fluff with a fork. Sprinkle with chives; toss to combine. Yield: 2 servings (about 3/4 cup each). Nutrition Information: Per serving = calories 236 (19% from fat) , fat 4.9 g (sat 0.7 g, mono 3.4 g, poly 0.6 g), protein 6.4 g, cholesterol 0.0 mg, calcium 33 mg, sodium 323 mg, fiber 3 g, iron 1 mg, carbs 41.4 g.
