Banana Bran Muffins

Healthy Banana Bran Muffins

 

1 1/2 c. Bran Flake Cereal

2 bananas, mashed

1/2 c. milk

1 egg

2 T. Canola Oil

1/2 c. raisens

1/2 c. chopped Walnuts(toasted in a dry frying pan or microwave)

2 T. shelled Hemp Seeds

2 T. Millet (dry beads)

1 c. all purpose flour

2 t. baking pwd.

1/4 t. baking soda

1/8 t. pumpkin pie spice blend or nutmeg

 

Preheat oven to 400 degrees F. Spray 12 muffin cups or line with paper

cupcake liners.

 

Combine cereal, banana, milk, egg, oil and raisens in a bowl and mix well.

Let stand for 5 minutes. Combine flour sugar, nuts, millet, hemp seeds,

sugar, baking pwd. and baking soda in a seperate bowl. Add cereal mixture

all at once to the flour mixture, stirring just until moistened. Divide

evenly amoung prepared muffin cups. Bake 20 minutes or until tester

inserted into the center comes out clean and they are browned on top.

 

*I added the raisens, walnuts, hemp seeds and millet, but they were not in

the orginal recipe and will turn out fine if you choose not to use them. I

did not adjust any of the ingredients when I added these 4 things.
