Guest guest Posted February 5, 2007 Report Share Posted February 5, 2007 Low Fat Mashed Potatoes 2-1/2 lb. red potatoes, scrubbed, quartered if large 1 cup low fat buttermilk 1 tsp. salt 1/2 tsp. ground black pepper 2 TB fresh rosemary, finely chopped Place potatoes in a large sauce pan with salted water to cover. Bring to a boil. Reduce the heat and simmer for 20 to 25 minutes, until tender. Drain, then return the potatoes to the pot. Stir over low heat for 1 minute to dry the potatoes slightly. Mash until smooth. Add the buttermilk, salt and pepper, and beat until fluffy. Just before serving, sprinkle with the rosemary. Serves: 4 to 6.
