Guest guest Posted February 5, 2007 Report Share Posted February 5, 2007 Cajun Roasted Potatoes Quick and spicy. 2½ lbs. potatoes (about 3 medium) ¼ cup vegetable/olive oil 2 shallots, finely chopped 1 clove garlic, minced 1 teaspoon salt ½ teaspoon paprika ½ teaspoon cayenne pepper ½ teaspoon finely ground black pepper (optional) 2 tablespoons fresh parsley Preheat oven to 450 degrees. Peel the potatoes. Cut each potato lengthwise into 8 wedges. Rinse under cold running water and pat dry with a kitchen towel. Mix together in large Ziplock bag, the oil, shallots, garlic, salt, paprika, cayenne pepper, and black pepper. Add potatoes and shake to coat them evenly with the oil mixture. Pour out of the bag into a Jelly Roll Pan or Baking Sheet. Roast the potatoes, turning them every 15 minutes, until tender and golden brown, about 45 minutes. Taste and adjust the seasoning.
