Guest guest Posted February 1, 2007 Report Share Posted February 1, 2007 Marinated Tomato Salad ~~~Marinade~~~ Add to a blender or food processor: 1 cup packed fresh parsley 1/4 cup chives 1 garlic clove 1/4 tsp. salt 1/8 tsp. ground black pepper 3 TB extra virgin olive oil 3 TB cider or red wine vinegar Cover and blend until well mixed. Cover and refrigerate. When ready to serve, pour over: 3 to 4 fresh tomatoes, cut into wedges Serves: 6. Nutrition Information: Per serving (1 TB marinade) = calories 79, sodium 12 mg, carbs 6 g, protein 1 g, fat 7 g. Diabetic Exchanges: 1 fat, 1 vegetable.
