Guest guest Posted January 29, 2007 Report Share Posted January 29, 2007 Southwest Chili 1 large onion, chopped 1 TB olive oil 2 large tomatoes, chopped 1 can (4 oz.) can chopped green chilies, undrained 1 TB chili powder 1 tsp. ground cumin 1 cam (15 oz.) red kidney beans, undrained 1 can (15 oz.) Great Northern beans, undrained 1/4 cup fresh cilantro leaves, chopped, optional Sauté and stir onion in oil in large sauce pan over medium heat until onion is soft. Stir in tomatoes, chilies, chili powder and cumin. Bring to a boil. Add beans with liquid. Reduce heat to low. Cover and simmer 15 minutes, stirring occasionally.
