Guest guest Posted January 25, 2007 Report Share Posted January 25, 2007 Red Potato Salad 6 medium sized potatoes, cooked, diced, still hot 1/4 cup green onions, thinly sliced OR 1/2 cup red onion, diced ~~~Dressing~~~ 1/2 cup mayonnaise 1/2 cup sour cream 2 TB Dijon mustard, or to taste 1 TB tarragon or white wine vinegar 2 tsp. chopped dill weed 1/8 tsp. ground black pepper 2 TB salted capers, rinsed and chopped OR 2 TB pimiento stuffed green olives, chopped In a large salad bowl, mix sour cream and mayonnaise, add mustard, vinegar and capers.
