Guest guest Posted January 27, 2007 Report Share Posted January 27, 2007 Spinach Salad 3 cups fresh baby spinach leaves, washed and drained well 3/4 cup orange segments 1/2 small onion, thinly sliced 1/3 cup fresh blueberries 2 TB pecans, chopped, toasted ~~~Dressing~~~ 1 TB canola oil 1 TB rice wine vinegar 1 TB balsamic vinegar 2 tsp. honey 1 tsp. Dijon mustard 1/2 tsp. curry powder Salt, to taste On two salad plates, arrange the spinach, orange segments, onion and blueberries. Sprinkle with pecans. In a small jar with a tight fitting lid, combine the dressing ingredients; shake well. Drizzle over salads. Yield: 2 servings. Nutrition Information: Per serving (2-1/2 cups) = 210 calories, 13 g fat (1 g sat fat), 0 cholesterol, 175 mg sodium, 24 g carbs, 5 g fiber, 3 g protein.
