Here are some Vegetarian Meal Options we enjoy

Here is something similar to what Vegetarian meals are like at our home. I

thought this might help some of the new folks.

Breakfast meal ideas

*Soy yogurt or Breyers Fruit on the Bottom Yogurt mixed in with Bare Naked

Granola

*A fruit smoothie

*Toast or pancake with peanut butter spread on it and Maple Syrup, apple

sauce or apple butter on top

*Sauted veggies mixed in with cooked couscous

* Cooked Oatmeal, Cream of Wheat, or 7 Grain Cereal . Add in your bowl, any

of the following - sliced bananas, trail mix, nuts, maple syrup

*Shredded wheat biscuits cereal with soy milk and sliced strawberries,

blueberries or sliced bananas

*Steam fried potatoes, Grits with Baco's sprinkled on the plate(so they stay

crispy), Hearty WW Toast spread with Smart Balance Light with Flax Seed Oil

or jam

*Fresh Fruits or Fruit Salad, Fruit Juice, Roma Hot drink with Silk Soy

Creamer

*Biscuits and Gravy(I season it with the *Chicken " Seasoning recipe I have in

the files here) or with McKay's Chicken like seasoning or Bill's Best

*Boiled Eggs, Baked Morning Star Farms Breakfast Strips and Grits. Whole

wheat toast with some jam.

*Biscuits, with baked MorningStar Farms Breakfast Patties, a fried egg. I

split open the baked biscuit and put inthe baked patty, cut in half if a

small biscuit add part of a fried egg

Then I make a mixture of mustard and Veganaise and spread on the inside of

the biscuit.

*Can of Loma Linda Little Links(boil in their own broth), and serve chopped

up in a bowl of grits. Sometimes I dice up some sweet onion and tomatoes

and sprinkle on top of this.

*Heat a can of Loma Linda Swiss " Steak " and served chopped up in a bowl of

hot grits.

*Thickend Stewed fruit over toasted WW Bread

*Left over's from another meal

 

Lunch suggestions

Sandwiches, soups, stir fries, baked potatoes with Mushrooms, green peppers

and onions sauteed in Smart Balance Light with Flax Seed Oil and a little

Smart Balance Light, Sour Cream and chives on the Potato, You could add some

steamed broccoli too and diced red or green onions, cheese.

*steamed veggies seasoned with herbs, Baked Sweet Potato Fries, Pasta

Salads, Salads

 

Supper/Dinner

*Breaded Fried Worthington Choplets(Gluten patty, Frozen Lima Beans cooked

with a can of diced or stewed tomatoes, Beets

*Fruit Salad, Salad Bar,

*Stews, Lentil, potato or Minestrone Soups, Chili

*Cornbread, Muffins

*Green Pepper " Steak " Stir fry served with cooked Basmati Rice. I make this

with Choplets, dried and cut into strips. Recipe is in the files under Meat

Substitutes and then Not Cow I believe or maybe in the Asian file.

*Haystacks - recipe in the Mexican file

*Spaghetti prepared with browned Worthington Vegetarian Burger, onion,

mushrooms added to a jar of spaghetti sauce, steamed

carrots/broccoli/cauliflower, garlic bread(make this with Smart Balance

Light with Flax Seed oil and fresh minced Garlic, and a tossed salad

*Black Bean Stack - Cook some basmati Rice, Heat a can of Black Beans.

Dice up some onions, tomatoes, green peppers. Each person puts a bed of

rice on their plate, then beans go over that. Sprinkle the onions,

tomatoes, green pepper and salsa/jarred jalapeno slices(optional) Diced

Avocado's and shredded cheese are nice sprinkled over this also.

*2 - 15 oz cans of Garbanzo Beans, drained, mixed and heated with 1 - 15oz

can of Tomatoes with Jalopeno's or Green Chili's and some diced onions.

Simmer for about 5 minutes. Serve with some Cornbread muffins and some

fresh chopped veggies.
