See my adaption at the bottom.This recipe was posted by Myrtle Killian in I wanted to share this recipe around and hope others enjoy it too. Donna Mock Lima " Cod " Cakes 20 ounces fresh baby lima beans or other shell beans 3 tablespoons butter 1 small onion, minced 1 large garlic clove, minced 1 small green bell pepper, minced 1 egg 1 teaspoon salt generous grinding of black pepper 1 teaspoon Old Bay Seasoning 1 pinch cayenne pepper, large pinch 2 tablespoons minced fresh parsley 2/3 cup sieved dry bread crumbs olive oil for frying tartar sauce lemon wedges Steam the beans until just tender, do not overcook. While the beans are steaming, melt the butter in a frying pan. Add the onion and garlic and saute over medium heat until limp. Add the green pepper, turn up the heat, and cook, stirring, for 3 minutes. When the beans are tender and still bright green, remove them from the steamer and run them under cold water to set their color. Drain well and cool. Puree the beans and egg in a food processor. The mixture will look a bit dry. Scrape into a bowl and add the seasonings and parsley. Stir in the onion. Form the mixture into 16 flattened cakes about 2-inches round and 3/4-inch thick. Press each cake into the bread crumbs. Refrigerate for at least 30 minutes. Fry the cakes in olive oil over medium heat until the crumbs are golden brown. Serve with a dab of tartar sauce. Squeeze on lots of lemon. Serves 6 to 8. Note - I used red bell instead of green, I used frozen lima beans and let them thaw and didn't cook them, I mixed the breadcrumbs into the patty intead of coating them and refrigerating for 30 minutes. I will make this again. I also made the patty a burger size and ate in a bun.
