Guest guest Posted January 16, 2007 Report Share Posted January 16, 2007 Apple Streusel Muffins 2 c. flour 1 c. sugar 1 Tbsp. baking powder 1 1/4 tsp. cinnamon 1/2 tsp. salt 1/2 tsp. baking soda 2 large eggs 1 c. sour cream 1/4 c. butter, melted 1 c. apples unpeeled and finely diced. TOPPING 1/4 c. sugar 3 Tbsp. flour 1/4 tsp. cinnamon 2 Tbsp. cold butter Preheat oven to 400 deg. Grease 12 large muffin cups. In a large bowl stir together the the dry ingredients. In a small bowl thoroughly combine eggs, sour cream and butter. Add all at once along with the apple to the dry ingredients. Stir until moistened, about 20 -25 strokes then divide batter evenly among the greased muffin cups. For the topping, combine sugar, flour and cinnamon. Cut in butter until mixture forms course crumbs. Sprinkle wach muffin with streusel topping.
