Chocolate Fudge Pie

 

1 unbaked single pie crust

 

To make the crust: Prepare as directed. Do not bake. Preheat oven to 350 º

F.

Place wire cooling rack on countertop for cooling the pie.

 

~~~Filling~~~

1/4 cup shortening

1 bar (4 oz.) sweet baking chocolate

1 can (14. oz.) Eagle brand sweetened condensed milk

1/2 cup all purpose flour

2 eggs, beaten

1 tsp. vanilla extract

1/4 tsp. salt

1 cup flake coconut

1 cup chopped pecans

 

Unsweetened whipped cream or ice cream, for garnish

 

To make the Filling: Melt 1/4 cup shortening and chocolate in a heavy sauce

pan over ow heat.

Remove from heat. Stir in sweetened condensed milk, flour, eggs, vanilla

extract and salt; mix well.

Stir in coconut and nuts. Pour into unbaked pie crust.

 

Bake for 40 minutes or until toothpick inserted int the center comes out

clean. Cool completely on

wire rack.

 

Serve with unsweetened whipped cream or ice cream, if desired.

 

Refrigerate left over pie.

 

Makes: one (9 " ) pie -- 8 servings.
