We served it with garlic herbed mashed red potatoes and sauteed garlicy green beans. Enjoy, Judy Mock Meatballs Makes about 26 large mock meat balls 5 eggs 1 c. grated Cheddar Cheese 1/2 c. Cottage Cheese 1 med. onion, diced fine 1 t. basil, dried 1/2 t. Sage 1/2 t. Salt 2 1/2 c. Herb Seasoned Stuffing Mix, crushed 1 c. pecans, chopped small and toasted in a dry frying pan Mix together 1 (8oz) can of Tomato Sauce 1 c. Water In a mixing bowl, beat together eggs, cheddar and cottage cheese, onion, basil, salt and sage. Add stuffing mix and pecans. With an Ice Cream Scoop or large Cookie Scoop, put scoops of mixture onto a sprayed large Jelly Roll pan or large casserole dish, making mounds to form meatballs. Pour tomato sauce and water mixture over the meatballs. Bake @ 375 for 40 minutes or until nicely browned. The liquid left after baking will be absorbed by the meatballs as they cool.
