Guest guest Posted January 10, 2007 Report Share Posted January 10, 2007 Spinach Cheese Bites 1 Tbsp olive oil 2 cloves garlic, minced 1 6-oz. Bag baby spinach, coarsely chopped 1 tsp. Italian seasoning 1 and one half cups shredded pepper jack cheese (Monterey Jack with Jalapeno peppers) 16 crackers (melba toast, Club, Ritz) Saute garlic in olive oil in a skillet, add spinach and cook for several minutes until spinach wilts. Remove from heat and add Italian seasoning and cheese and mix well. Place a tablespoon of mixture on each cracker and bake for 5 minutes at 375 degrees.
